Uncle Vinny’s Pizzeria and Ristorante opened in Carolina Beach to rave reviews from Pleasure Island locals and tourists alike in their first week of business serving the Pleasure Island area.  Offering authentic Italian cuisine, superb sub sandwiches, and unbeatable brick oven style pizzas, Uncle Vinny’s is one of the hottest new restaurants on the Island.  Uncle Vinny’s Pizzeria and Ristorante comes to us from the vision of Uncle Vinny himself, who after vacationing in the are for over 20 years has finally realized his dream of opening an Italian restaurant right here on the beach, that caters to locals and treats everyone who walks through the door like family.  Owners and operators Vinny and Kori Doria have put together an expansive menu that serves as a tribute to the cooking style and recipes of Vinny’s late mother.  With over 3 decades of experience working in the family restaurants, Vinny was learning how to make the best food from the start.  Helping to cook for as long as he can remember, Vinny would roll meatballs for his mother when he was a young as 5 years old and this special bond grew into a love and passion for the art of creating wonderful food.  Pleasure Island has now been lucky enough to be selected as Vinny’s new home as our area stole him away from the Raleigh area where he has opened quite a few successful restaurants.  But ever since Vinny first moved to the Raleigh area and took a vacation to Pleasure Island he and his family loved the community and knew they wanted to one day make it their home.  Know opened and realizing the dream, Vinny is incredibly excited and “feels blessed” by how the community has received him, his family and now his restaurant.  Open year round and geared towards making Pleasure Island residents happy, Uncle Vinny’s offers affordable homemade cuisine that can’t be beat.  Everything from the family lasagna recipe to the “best brick oven pizza in the Wilmington area” is a great choice at Vinny’s and when you finish you will be ready to come back and try more!  Uncle Vinny’s is the perfect place to go for lunch or dinner with their wonderful menu full of mouth watering choices.  Start your meal with an appetizer like their “Mozzarella Caprese,” “Sauteed Mussels,” or “Traditional Antipasta.”  They offer salads and soups perfect as starters or as a meal themselves.

Our other selection was a half order of gnocchi ($8.50) with meat sauce and a golf-ball-size meatball ($1.50). The half serving was huge, and my guest liked the ground meat sauce with the gnocchi. The meatball was tasty and firm, and the side salad was

Meatball Sub Recipe - Great For Lunch, Dinner Or During The Game

We love to make homemade spaghetti and meatballs , but it makes a bunch of meatballs. We will often have some leftover, which no one complains about, because it just means we can have some for lunch the next day.

To mix it up a bit though, I decided to use the leftover meatballs to make these sandwiches instead of just warming up sauce, meatballs and more spaghetti. I have to say, these subs were a big hit, and we are already planning to make a double batch of meatballs sometime, to allow more sandwiches in the future for a party.

Ingredients: Leftover meatballs* and sauce Provolone or mozarella cheese slices Grated parmesan cheese Sub style bread

* We use the meatballs we already have from making out spaghetti and meatball recipe, and you can do the same, or make the meatballs specifically for this recipe instead. Here is the meatball recipe again.

Some additional optional ingredients that we have considered, but haven't added yet, are sauteed onions and peppers, which would be really yummy, I think.

Directions:

Preheat your oven to 350°F.

Reheat your meatballs, if you are using leftovers, since you will use the oven mainly to toast your bread a bit, and melt cheese.

Cut your sub rolls in half, and place on a baking sheet. Cover one side of the bread with cheese and the other side with 4-5 meatballs (or less for children). Cover with sauce and sprinkle with parmesan cheese.

Place in the oven until the cheese is melted and the bread is beginning to get toasty. We sometimes stick them under the broiler for a minute or so, to brown the cheese a bit.

Let them cool slightly, so the melted cheese doesn't burn your tounge, and then enjoy! A simple way to turn leftovers into something delicious and highly anticipated all on its own. You gotta love that!
